What you'll need:
Spinach (1 cup), tomatoes (1 1/2 cup), sweet cherry tomatoes (1/2 cup) and 1/2 avocado
Directions:
- Make vinaigrette (mix 3 tablespoons sherry vinegar, 1 minced jalapeno, 1/4 cup oil and 1/4 teaspoon salt)
- Core tomatoes and slice into wedges, toss with 1 tablespoon vinaigrette
- Cut cherry tomatoes in half and toss with 1 tablespoon vinaigrette
- Peel and cut avocado
- Toss spinach with part of the vinaigrette and place on serving plate
