Starburst Grapefruit Salad

What you'll need:
Peeled and sectioned Texas ruby red grapefruit (1 per serving), stemmed and halved strawberries (3/4 cup), clean spinach (2 cups, packed), homemade vinaigrette (Mix 2 tablespoons of sherry vinegar with 1/2 tablespoon of granulated sugar, 1 tablespoon of finely diced shallot, 1 tablespoon of grapefruit juice from above, 1/4 teaspoon of salt, 1/4 cup of vegetable oil, 1/2 teaspoon of poppy seeds and 1/2 teaspoon of grapefruit zest.)

Directions:

  • Peel and section the grapefruit over a bowl, reserving the juice and sections for the salad and dressing.
  • Combine the grapefruit sections and strawberries in a bowl. Toss gently and reserve until needed.
  • In a blender, combine the vinegar, sugar, shallots, grapefruit juice and salt. Process until smooth.
  • Slowly drizzle the oil through the hole in the lid while the blender is running and process until the dressing has thickened.
  • Remove from the blender and stir in the poppy seeds and grapefruit zest.
  • Toss the grapefruit, strawberries with the poppy-seed dressing.
  • Arrange spinach (torn into bite-sized pieces) on chilled plates. Place the grapefruit sections and strawberries on top. Serve immediately.
