Morning Muffins

Just about everyone is used to starting the morning with a mad dash; and more than a few of us skip breakfast as we fly out the door. Well, how would you like to start your day with a delicious, protein packed and easy to grab muffin?

No, no not the 600 calorie ones that are the size of your face, I?m talking about a healthy fiber and fruit filled power muffin that tastes delicious! Try this Cherry-Apple Bran Muffin recipe and you will have breakfast ready and waiting for you all week-long.

Cherry-Apple Power Bran Muffins

Ingredients
1 Cup whole wheat flour
1 Cup oat bran
1/2 cup light brown sugar
1/4 cup non fat dry milk powder
1/4 cup protein powder
2 1/2 tsp baking powder
1 tsp cinnamon
1/4 cup flax seeds
Pinch salt
1 honey crisp apple diced
1/2 cup dried sour cherries
1/2 cup fat-free milk
3/4 cups natural applesauce
1/4 cup canola oil
1 large egg
1 tbsp vanilla

Method

Preheat oven to 375 degrees.Coat muffin cups with Pam spray. Mix wet and dry ingredients separately then combine. Do not overmix.

Spoon mixture into muffin cup tray filling about 3/4 of the way. Bake for 20-25 minutes or until you insert a toothpick and it comes out clean. Cool on a rack and enjoy.
