Cinco de Mayo

Updated: July 27, 2010

Feliz Cinco de Mayo!! May 5th is NOT a grand Mexican holiday or Independence Day, as you might think. On this day in 1862, 4,000 Mexican soldiers smashed the French army of 8,000 at Puebla, Mexico.

In recent years, Cinco de Mayo has turned into a chance for Mexican-Americans to celebrate their rich heritage. Have your own Cinco de Mayo fiesta by cooking some healthy Mexican-inspired recipes and learning about music and dance from around the country.

Unless otherwise noted, all recipes are from Cal-a-Vie Living Gourmet Spa Cuisine, from the chefs at Cal-a-Vie Spa, just outside San Diego, Calif.
